Grilled Lemon and Herb Chicken


4 boneless, skinless chicken breasts
2 lemons, juiced
2 cloves of garlic, minced
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried basil
Salt and pepper, to taste


In a small bowl, mix together lemon juice, garlic, olive oil, thyme, basil, salt, and pepper.
Place chicken breasts in a large, resealable plastic bag and pour marinade over the chicken. Seal the bag and toss to coat the chicken evenly. Marinate in the refrigerator for at least 1 hour or overnight.
Heat grill to medium-high heat.
Remove chicken from marinade and discard remaining marinade. Grill chicken for 6-8 minutes per side, or until cooked through.
Let chicken rest for 5 minutes before slicing and serving.
Serve the chicken with a side of your choice like a green salad, roasted vegetables or quinoa.
